Bacon Breakfast Tart With Fresh Mozzarella

  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 teaspoon each of dried basil and tarragon leaves
  • 1/4 teaspoon each of salt and pepper
  • 1 sheet puff pastry dough, defrosted
  • 8 ounces Frigo® Fresh Mozzarella Cheese, sliced into 20 very thin slices
  • 6 bacon slices, cooked crisp and halved
  • Tomato slices

Directions

Preheat the oven to 425oF and line a baking sheet with parchment paper.

In a skillet over high heat, melt the butter with the garlic. Cook, stirring constantly, until the mixture is melted and foamy. Remove from the heat and stir in the basil, tarragon, salt and pepper and set aside.

Meanwhile, on a lightly floured surface, roll the puff pastry into a 12" x 12" square, and place it on a prepared pan. Trim ½ inch from each side, brush each edge with the garlic butter and place a pastry strip on each edge, pressing down. Prick the pastry all over with a fork and bake for 7 minutes. Then, remove it from the oven and spread the pastry with the remaining herb butter mixture. Top it with the Frigo® Fresh Mozzarella Cheese, bacon and tomato slices.

Return it to the oven and bake for 8–10 minutes, or until the cheese is melted and the pastry is puffed and golden. Cut and serve immediately.
